Water is a living substance whose greatest purpose is to support life. However, its life-giving potential depends on what it is subjected to on its journey from cloud to drinking class. It is delicate, sensitive and susceptible to outside influences of every kind.

Once we have accepted this, it becomes easy to see how important it is to treat water with the ultimate respect. We are a walking water vessel and we need to be extremely vigilant about the water we drink because the quality of what we drink affects the quality of what's inside us.

Water's molecular structure becomes extremely damaged when exposed to extremes of temperature, when it is forced, under pressure, to feed our water supply stations or when it is brutally pumped through metal pipes that suffocate it by stripping it of oxygen.

Restructuring water is an attempt to restore and rejuvenate water, based on close observation and comprehension of fresh water's natural journey. Simply put, it's an attempt to let water be itself.

Scientists have concluded that water is at its densest and most valuable at a temperature of between 4 and 9*C. Between these temperatures, oxygen is bound in and water is benign and beneficial. Above 9*C, water creates a harmonious environment for parasites.

Assuming our water is clean (either by filtration or distillation), and at the right temperature it can be restructured in a variety of ways.
